In my “What We Ate” posts each week I’ll share some of the recipes we ate for dinner the previous week. I love to get inspiration from what other families are eating so I thought it might be helpful to some of you. Please leave a comment if you have questions about any of these recipes. And if you know of a recipe that you think we might like please share it with me!

There are only 6 dinners this week because I’m taking the boys to visit my sister and a friend for a few days so I wanted to go ahead and post this.  I’ll be sure to report back what we ate while away from home!

  • We ate lunch at a BBQ place with my in-laws for Father’s Day lunch.  We had plenty of leftovers so I had my leftover salad and my husband had the leftover mac and cheese and green beans.  I have no idea what my kids ate since they spent the night with my in-laws.  I probably don’t want to know.  🙂
  • The BBQ place we went to has a great southwest chicken salad that I really like, but it’s huge.  So when it came to the table I went ahead and put 1/2 into a to go box for dinner.  That’s a great way to exercise portion control if it’s something you struggle with.  Believe me, I wanted to keep eating because it was so good but I knew I was getting full and it was time to stop.

***Date Night at Taco Diner

  • The kids were still with the grandparents this evening.  This is a rare treat for us so we decided to eat out.  We went to Taco Diner, one of our favorite spots in a cute little nearby shopping center.
  • I had tortilla soup and my husband had tacos.  I knew I’d eat a lot of chips with their yummy green sauce so I went with a lighter choice and just got a bowl of soup.  It did not disappoint.  It was very good!
  • My original plan for this meal was a kale salad so I put that on hold until later in the week.

***Slow Cooker White Turkey Chili

  • I made this slow cooker white turkey chili with a few modifications.  I added more liquid and used about 7 oz. dried beans instead of canned.  I also added more onion and peppers.  In addition to those changes, I used ground chicken instead of turkey.  This was actually by mistake.  I thawed out chicken and didn’t realize it until the morning.  It still tasted great, but I think I prefer the turkey.
  • We had cheese, cilantro and a tomato from the garden on top of our soup.  We also had cantaloupe.

***Kale Salad With Warm Maple Bacon Vinaigrette

  • I made the most delicious kale salad!  I had a huge salad for dinner and my husband had a smaller one with a baked sweet potato and fruit on the side.  
  • I don’t expect my kids to eat a big kale salad for dinner.  I gave them each a little bit and then gave them fruit, cucumber, granola and a few crackers with hummus.  Both boys tried several bites of their salad and I was happy with that.  They also each had a banana after finishing their plates.

***Breakfast For Dinner

  • Since we had bacon leftover from the kale salad what else was I to do but make breakfast for dinner!  We had eggs, bacon, muffins (pumpkin & sweet potato) from the freezer, and watermelon (not pictured).
  • It’s hard for me to have a dinner without any sort of veggie so I also made some guacamole and pico de gallo to top my eggs.  I tried to entice the rest of the family but they weren’t interested.  I get it; not everyone likes veggies with their eggs.

  • I had just a little bit of chili left after freezing most of the leftovers.  We each had a small bowl of soup with cheese, avocado, and cilantro on top.  We also had carrots and cantaloupe.
