I have a new dressing recipe to share with you today. This avocado cilantro lime dressing is the perfect mix of creamy avocado goodness plus the amazing flavor of cilantro. It’s the perfect dressing for a taco salad or any other type of southwestern salad or dish. I love it because it adds so much flavor at only about 15 calories per tablespoon. That’s not bad for dressing! Not only is it low calorie but it’s a nutrition powerhouse. The three main ingredients (avocado, cilantro, and Greek yogurt) provide calcium, healthy fats, fiber, and lots of vitamins and minerals.
I usually don’t buy fat free dairy but I happened to have some fat free Greek yogurt when I made this and I think it worked out really well because it’s thinner than 2% or full fat yogurt so I didn’t need to add as much water to the dressing. If you use full fat yogurt you will probably want to add a little extra water to achieve the right consistency.
I’ve not only used it as a dressing but also as a dip for chips, carrots, peppers, and celery. I hope you like it as much as I do!
This dressing goes perfectly on a taco salad made with my Freezer Friendly Taco Skillet or Crockpot Fiesta Chicken. I packed some up and took it with me to Salata the other day. I chose the chipotle chicken on top of a bed of greens with lots of veggies and black beans. It was a delicious addition to my salad and healthier than their dressing choices.
I’ve had good results with freezing this dressing as well. I freeze it in ice cube trays and just pull out a cube or two and let it defrost in the fridge. It does separate some because of the yogurt but just mix it up really well and it’s good as new.
- ½ an avocado
- ¼ cup Greek Yogurt (I used fat free)
- 6 T water (or more if you want it less thick)
- 1 cup cilantro leaves, packed
- big squeeze of lime juice (about ½ - 1 T)
- ½ tsp garlic powder, or one clove minced
- ½ tsp salt
- pinch cumin (optional)
- Put all ingredients into a food processor and process until well blended.
