Healthy Bruschetta Chicken2

If you love traditional bruschetta but are looking for a healthier alternative, look no further.  This recipe has the traditional bruschetta tomato, basil and garlic mix, but instead of topping bread we’ll be topping juicy sautéed chicken.  This is a healthy, fresh, and flavorful dish that is perfect for summer!   I know a lot of people enjoy growing tomatoes and basil in their home gardens so you might be able to step outside and harvest some of the ingredients yourself.  It doesn’t get any better than that.  My tomatoes aren’t ready yet but I was able to cut plenty of basil off my plant.  I love it when I don’t have to buy something at the store because it’s in my backyard!

You could really bake, grill or sauté the chicken and this recipe would turn out great.  I went ahead and sautéed the chicken using this method because I think it comes out so nice and juicy.  I also bet it would be great marinated in some Italian dressing and then grilled on your grill or baked in the oven.  But you can do whatever works for your family.  Just make sure to make the tomato mixture ahead of time so the tomatoes can marinate and absorb a lot of the balsamic flavor.  The bruschetta tomato mixture is the star of this recipe so you want to make sure it is nice and flavorful.

This chicken is delicious served with a side of brown rice.  I also think it would be great with some whole wheat pasta with a little pesto or olive oil or even some zucchini noodles.  Or just serve it along side some green veggies and you have a super healthy dinner.  I’m also guessing sprinkling some Parmesan cheese or mozzarella on top would take this to a whole new level!  I just might have to try that next time.   

This is a great dish to serve for your summer get together because part of it needs to be done in advance, which saves you some of the work while your guests are there.  Just prepare a salad and the tomato mixture ahead of time so all you’ll have left to do is cook your chicken and prepare another side of your choice as it gets closer to dinner time.  It doesn’t get much easier than that.

Sautéed Chicken Ingredients:

1 – 1 ½ lbs chicken (2-4 chicken breasts)
½ tsp salt
½ tsp pepper
½ tsp onion powder
1 tsp garlic powder
½ tsp italian seasoning
2-3 tsp butter
2-3 tsp olive oil

Bruschetta Topping Ingredients:

4-5 Roma tomatoes
2 cloves garlic, minced
10 basil leaves, chopped
salt and pepper, to taste
1 – 1 ½ T olive oil
1 ½ – 2 tsp balsamic vinegar

1.  Make the tomato mixture by dicing the tomatoes and putting them in a medium bowl.  Add the garlic and basil and mix until combined.  Add salt and pepper to taste.  Drizzle olive oil and balsamic vinegar over the mixture and stir.  Cover and place in refrigerator for 2 or more hours or up to 24 hours.  Taste mixture and add more salt, pepper, or vinegar as needed.
2.  For the chicken, mix together the salt, pepper, onion powder, garlic powder and Italian seasoning.  Set aside.
3.  Pound the chicken until it is an even thickness throughout.  Heat a skillet over medium heat and add the butter and olive oil.
4.  Once the skillet is hot add the chicken.  Cook on each side for about 5-10 minutes (depending on the thickness of your chicken.)  Chicken is done once it reaches 160º F.
5.  Once cooked through, transfer the chicken to a cutting board, cover with foil, and let it rest 5-10 minutes.
6.  Plate your chicken and top with the tomatoes.
