We’re going to be traveling the rest of the week and into next week so I’m going to go ahead and share what we’ve eaten so far this week and then I’ll do a vacation “what we ate” post when we return.

***Leftover Southwest Quina Bowls and Broccoli

  • We had what was left of the quinoa bowls from the night before.  I also steamed some broccoli.
  • The kids had some leftover macaroni and cheese from lunch with theirs.

***Paninis made with whole wheat pita bread

  • I made personalized panini sandwiches with whole wheat pita bread.  We had ham, cheese (mozzarella and cheddar), chicken, and pesto available and each of us picked our own combo.  We had broccoli and strawberries (not pictured) as well.

***Small Group Picnic

Forgot a picture!  Sorry!

  • We had a picnic fellowship with our small group from church.  I brought a salad for me, sandwich for my husband, and homemade lunchables for the kids.  We also had carrots and strawberries.  I also brought some Mom’s Best Cheerios, pistachios, and apples because I knew the kids would want more after running around.  Sure enough, they ate it all!

***Leftover sliders

  • We had enough sliders leftover for us to each have one for dinner.  I had mine open faced.
  • I attempted something new to go with the sliders.  It didn’t turn out so well, unfortunately.  I took the leftover corn tortillas that I had and brushed them with avocado oil and added salt.  I then baked them in the oven to try to make baked corn chips.  The flavor was great but they were just too chewy.  Next time I’ll try them in my cast iron skillet.  I made some guacamole and pico de gallo to go with them.  Since the homemade chips turned out so difficult to eat I opened a bag of organic corn chips I had on hand.  The boys also had a banana.

  • The boys and I stayed with some good friends of ours and they grilled chicken for dinner.  We also had corn, sautéed potatoes, rolls and fruit.  It was all delicious!

There are only 6 dinners this week because I’m taking the boys to visit my sister and a friend for a few days so I wanted to go ahead and post this.  I’ll be sure to report back what we ate while away from home!

***Leftovers

  • We ate lunch at a BBQ place with my in-laws for Father’s Day lunch.  We had plenty of leftovers so I had my leftover salad and my husband had the leftover mac and cheese and green beans.  I have no idea what my kids ate since they spent the night with my in-laws.  I probably don’t want to know.  🙂
  • The BBQ place we went to has a great southwest chicken salad that I really like, but it’s huge.  So when it came to the table I went ahead and put 1/2 into a to go box for dinner.  That’s a great way to exercise portion control if it’s something you struggle with.  Believe me, I wanted to keep eating because it was so good but I knew I was getting full and it was time to stop.

***Hotdogs

  • We had four leftover hotdogs that we decided to grill.  I bought some corn on the cob and we cooked it on the grill as well, using this method.  We had fruit and carrots on the side.  It was all very good and seemed to be the perfect summer meal.  As an added bonus, we were able to enjoy the outdoors and eat on our patio.
  • The buns were really big compared to the hotdog so I only ate part of my bun.  One way I (sometimes) save calories (and a lot of added bread/carbs) is to keep most of my sandwiches, burgers, etc. open faced.

***Soft Tacos

  • My nephew graduated from high school so we went to a graduation party for him.  They served soft tacos, chips and queso, crackers and cheese, and fruits and veggies.  It was all very good and then we enjoyed the candy/treat table.  It was one of those with the little containers to encourage you to take some home.  Of course the boys’ aunt made them each take one and fill it to the brim.  So now their “treat bags” are full again.  Sigh…  I had a big chocolate cake ball that was SO good.  And I might have brought an extra one home.  😉

***Salmon Patties

  • I have made salmon patties before and we all liked them.  This time I decided to come up with my own version (made with almond flour) and I put together a creamy dill sauce to go with them.

***Pita Sandwiches

  • We had a church-wide picnic tonight so we packed pita sandwiches, carrots, fruit, and organic blue corn chips with salsa.
  • I used my panini press to warm the sandwiches and wrapped them in foil to keep them warm.  They were great!

***Leftover Pizza and Hotdogs

what we ate

  • We didn’t have our usual Sunday commitments so I was able to go to my PiYo class at 5:00.  Yay!   I needed a quick dinner I could throw together afterwards.
  • We had two pieces of leftover homemade pizza and two leftover hotdogs.  We warmed those up and also had steamed cauliflower and broccoli and fruit.  We were all still a little hungry after that so we snacked on the granola the boys and I made that afternoon.
