All you need are a few simple ingredients to make this tasty shredded salsa chicken. As an added bonus, it’s healthy and low in calories as well. Easy, nutritious, and delicious – my kind of recipe!
I’ve tried a lot of salsa chicken recipes and finally found one that’s made with the perfect salsa. This Tomatillo and Roasted Yellow Chili Salsa is the perfect mix of sweet and savory. I found it at Trader Joe’s but you can probably find something similar at your local grocery store.
This recipe couldn’t be more simple: chicken, salsa, garlic, and a green bell pepper. Seriously, that’s it. You could definitely add some corn and beans at the end but I really like the simplicity of this recipe. (I do have a similar recipe already on the blog that uses beans and corn: Crockpot Fiesta Chicken.) This chicken is perfect for burritos, tacos, rice or quinoa bowls, tostadas, or my personal favorites, taco salad and stuffed sweet potatoes. Just layer the ingredients in your slow cooker and let it cook on low for 6-8 hours or high 3-4 hours. My slow cooker actually cooks really fast so I only cooked it on low for about 5-6 hours. You will definitely want to pay attention to how your cooker works. Once it’s done cooking use forks to shred the chicken and then serve!
I love recipes like this because you can repurpose leftovers to make a completely different meal. It’s also freezer friendly so you can freeze the leftovers for a meal on a busy night when you don’t have time to cook.
- 4 chicken breasts
- Tomatillos and Roasted Yellow Chili Salsa, from Trader Joe's (or something similar)
- 2 cloves garlic, minced
- 1 green bell pepper, chopped
- salt and pepper, to taste
- Add all ingredients to the crockpot and cook on low 6-8 hours or high 3-4 hours.
- Add salt and pepper and taste. Add more salt and pepper as needed.
- If you happen to have some cilantro on hand add some in for an extra pop of flavor.
