We used to eat what we called “candied” carrots growing up. “Candied” because the recipe called for brown sugar. I always loved those carrots so I recreated the recipe using maple syrup. It’s a great side dish for any meal and very kid friendly.
3 cups sliced carrots
2 T butter
1 1/2 T maple syrup (brown sugar can be substituted)
1/2 tsp orange peel or freshly grated orange zest (optional)
pinch of salt
1. Steam the carrots for 7-9 minutes or boil them for 3-5 minutes, depending on how big the carrots are and how soft you want them.
2. While the carrots are cooking melt the butter in a saute pan over medium heat. Add the maple syrup, orange peel and salt.
3. Once the carrots are done cooking add them to the maple syrup mixture. Warm over medium heat for about 7 minutes, until flavors are absorbed.
4. Serve and enjoy!
