PB Chocolate Chip Fudge Bites

I have a minor addiction to chocolate and peanut butter.  Add coconut and/or coconut oil and I’m there!  These little fudge bites are so good.  They are a perfect snack or “healthy” dessert.  You can make them healthier by using a natural peanut butter with nothing added, just peanuts.  I had to ration them so I wouldn’t eat them all in one sitting!  If you don’t have chocolate don’t let that stop you from making them.  I made some without the chocolate and they were still delicious – just smooth and creamy peanut buttery goodness.  I think the combination of peanut butter (or other nut butter) and coconut oil is such a great mix for a little treat because it provides you with protein, fiber and healthy fat, a perfect combo for a filling and satisfying snack.

Ingredients:

1 1/3 cup peanut butter (or another nut butter)
1/4 cup coconut oil
3 T honey
1/2 tsp salt (use 1/4 tsp if your peanut butter has salt in it)
1/2 cup unsweetened coconut
1/3 – 1/2 cup dark chocolate chips or chunks (optional)

Directions:

1. Mix peanut butter, coconut oil, honey, salt and coconut together in a food processor.
2. Stir in the chocolate.
3. Pour one tablespoon into each mini muffin cup.  I use a cookie scoop to make it even easier.
4. Put the bites in the freezer for at least 30 minutes to solidify.
5. Eat!  You can eat them directly from the freezer or store them in the fridge.  (They will soften at room temperature.)

Makes about 30 bites.

  1. Have you ever made without the honey? Wondering how they would be. Going to definitely try these though!

    • I haven’t made this recipe without honey. I would think if you use a nut butter with added sugar you might be ok. But if you use a completely natural nut butter without added sugar they might be pretty plain. Just depends on what you are going for – more of a snack or more of a treat? 🙂 Let me know what you think if you make them. I have to pace myself when I make them. They are addicting!
