***In my Good Eats and Good Reads posts I’ll share a recap of the last several weeks in recipes, photos, and links.***

Things have been super busy around here.  I feel like the blog has been put on the back burner for a few weeks and I’m really trying to get back to it.  I recently gave two presentations to a local MOPS group and I spent a lot of time and energy preparing for that.  Hopefully future talks will take a little less preparation now that the first one is under my belt!

Here are a few yummy things we’ve eaten over the last few weeks.  (I share a lot of these on Facebook and Instagram so it may be a repeat for some of you.)

***One night I pulled out some Salmon Patties from the freezer and cooked them for the purpose of topping salads.  They make such a delicious topping for just about any salad combination.  Our salads had mixed greens, tomatoes, peppers, avocado, cucumbers, onions, and mushrooms.  We used my homemade balsamic vinaigrette for the dressing.

So I’ve decided to discontinue my “What We Ate” posts.  It was getting difficult to take a picture of our dinner every.single.night and most of the time the pictures were terrible anyway because I was trying to hurry.  Also, does anyone really care that we had leftovers or warmed up a burrito in the microwave?  I think not.  In the beginning, I wanted to share what we were eating to show that eating healthy doesn’t have to mean making a huge meal from scratch every night.  Sometimes we make something super simple and sometimes we simply have leftovers.  I wanted to share the reality of what a family eats on a nightly basis when eating out is not a regular part of the routine. I still plan to share some of what we are eating, just not on a daily basis.

Every couple of weeks I’ll share a recap of some of the things we’ve eaten (including breakfast, lunch, snacks, and treats), tips and tricks, random happenings, and links to relevant articles, blog posts, and books.  I’m a big reader and I have a passion for creating healthy family habits.  I’m constantly reading really great things about nutrition, feeding your family well, how to deal with picky kids, etc.  I’ll share some of those links in these posts for those that are interested.  And if you aren’t interested, just keep scrolling!

Family Picture CO

Every summer we go to Colorado for a family vacation.  My dad and step-mom live there in the summer so it’s the perfect opportunity to visit them and have an affordable vacation.  There are so many activities to do and it’s such a nice break from the brutal Texas heat!  What I love most about our Colorado trips is that we stay really active while on vacation.  It works out really well with our two young boys.  And as they grow up there will be more and more we are able to do as a family.

  • We had what was left of the quinoa bowls from the night before.  I also steamed some broccoli.
  • The kids had some leftover macaroni and cheese from lunch with theirs.

***Paninis made with whole wheat pita bread

  • I made personalized panini sandwiches with whole wheat pita bread.  We had ham, cheese (mozzarella and cheddar), chicken, and pesto available and each of us picked our own combo.  We had broccoli and strawberries (not pictured) as well.

***Small Group Picnic

Forgot a picture!  Sorry!

  • We had a picnic fellowship with our small group from church.  I brought a salad for me, sandwich for my husband, and homemade lunchables for the kids.  We also had carrots and strawberries.  I also brought some Mom’s Best Cheerios, pistachios, and apples because I knew the kids would want more after running around.  Sure enough, they ate it all!

***Leftover sliders

  • We had enough sliders leftover for us to each have one for dinner.  I had mine open faced.
  • I attempted something new to go with the sliders.  It didn’t turn out so well, unfortunately.  I took the leftover corn tortillas that I had and brushed them with avocado oil and added salt.  I then baked them in the oven to try to make baked corn chips.  The flavor was great but they were just too chewy.  Next time I’ll try them in my cast iron skillet.  I made some guacamole and pico de gallo to go with them.  Since the homemade chips turned out so difficult to eat I opened a bag of organic corn chips I had on hand.  The boys also had a banana.

  • The boys and I stayed with some good friends of ours and they grilled chicken for dinner.  We also had corn, sautéed potatoes, rolls and fruit.  It was all delicious!

There are only 6 dinners this week because I’m taking the boys to visit my sister and a friend for a few days so I wanted to go ahead and post this.  I’ll be sure to report back what we ate while away from home!

***Leftovers

  • We ate lunch at a BBQ place with my in-laws for Father’s Day lunch.  We had plenty of leftovers so I had my leftover salad and my husband had the leftover mac and cheese and green beans.  I have no idea what my kids ate since they spent the night with my in-laws.  I probably don’t want to know.  🙂
  • The BBQ place we went to has a great southwest chicken salad that I really like, but it’s huge.  So when it came to the table I went ahead and put 1/2 into a to go box for dinner.  That’s a great way to exercise portion control if it’s something you struggle with.  Believe me, I wanted to keep eating because it was so good but I knew I was getting full and it was time to stop.

***Hotdogs

  • We had four leftover hotdogs that we decided to grill.  I bought some corn on the cob and we cooked it on the grill as well, using this method.  We had fruit and carrots on the side.  It was all very good and seemed to be the perfect summer meal.  As an added bonus, we were able to enjoy the outdoors and eat on our patio.
  • The buns were really big compared to the hotdog so I only ate part of my bun.  One way I (sometimes) save calories (and a lot of added bread/carbs) is to keep most of my sandwiches, burgers, etc. open faced.
