In my “What We Ate” posts each week I’ll share some of the recipes we ate for dinner the previous week. I love to get inspiration from what other families are eating so I thought it might be helpful to some of you. Please leave a comment if you have questions about any of these recipes. ***Leftover soup and Amy’s organic burritos.

  • Sunday nights are busy for us so I don’t always make a meal.  Tonight I ate the last of the leftover soup and the rest of the family had burritos out of the freezer. They are not the most unprocessed meal but I can live with it on occasion.

***Homemade Chicken Patties from Real Fit Real Food Mom

  • This recipe is from a blog I really enjoy following.  You can see the link above.  I used homemade bread crumbs that I had in the fridge.  I added garlic powder and Italian seasoning.  I also added garlic to the chicken mix.  You can dress up the sandwiches any way you want – add lettuce, cheese, tomato, pickles, etc.
  • I served it with rosemary roasted potatoes and cantaloupe.
  • All the boys had a top bun and I had mine open-faced.  {This was a night that I didn’t plan as well as I usually do.  I like to make homemade buns or buy buns that don’t have a lot of unnecessary ingredients.  But because I didn’t plan ahead I had to run out to get some at the last minute and there were no good options at my Kroger.  Life happens sometimes!}
  • Verdict:  I loved them and the boys did too.  My husband said there was something a little off.  I knew right then what I had done that he didn’t like.  I have a tendancey to go overboard with garlic, onions, spices and such.  The more flavor the better for me but my husband doesn’t feel the same.  So that’s when I confessed that I didn’t use plain bread crumbs and I added garlic.  He said if I make them again to just follow the recipe.  So if you decide to make these just stick with the original recipe.  😉  They really were pretty good!

***Quinoa Patties from the freezer

  • The whole family really likes these patties.  If you are wanting to try quinoa this is a great place to start.  I often add spinach or kale to mine.  {A friend of mine texted me the other day to tell me they tried the quinoa patties and probably wouldn’t be making them again.  They were not a hit with her family.  That’s the tough part about trying new recipes – you just never know if you’ll like it until you try it.  On another note, she did say that they tried the Asian Inspired Green Beans and loved them!  So yay for that!}
  • We had broccoli and roasted brussels sprouts as well.

***Harvest Vegetable Beef Soup from the freezer

  • This is one of my favorite winter soups.  I don’t have a link for it because it’s written down in a recipe book from about 11 years ago.  It’s made of stew meat and loads of veggies.  I went in with a friend on part of a grass fed cow and I was excited to use some of the meat in this soup.  I also used some of the swiss chard from my front porch flower pots!
  • I served it with crackers and pears for the boys.  This soup is a hit with the whole family.

***Leftover Chicken Patties


  • We had 1 1/2 leftover patties from the other night.  Since my husband is out of town that was enough for the three of us.  I warmed them in the oven and made each boy a 1/2 sandwich.  I ate my 1/2 patty on a salad with homemade dressing, yellow bell pepper and cilantro.  The chicken made a great salad topping!
  • I warmed the leftover potatoes in the oven and steamed some non-gmo edamame from Costco.  I also cut up a pear for the boys.

***Tomato Bisque and Grilled Cheese

  • I pulled out some Tomato Bisque from the freezer.  When I made this I doubled the recipe so that I’d have plenty to store in the freezer for quick meals.  The recipe is from my 100 Days of Real Food Cookbook.
  • This soup is SO good with grilled cheese.  We had leftover edamame as well.
  • The boys love this soup and they love grilled cheese.  I was so surprised the first time I made it when the boys asked for seconds.  My oldest takes some in a thermos for lunch when I have extras.

***Meat and Cheese Nachos!


  • We are on day #3 without my husband so I figured we’d keep it easy and fun.  I gave the boys a few choices and they chose nachos.  I had about a 1/3 cup of taco meat in the freezer – the perfect amount for nachos.  I also had one last bag of organic corn chips that I got for super cheap around Super Bowl time.
  • We all love nachos so no complaining tonight!
  • They were definitely good but I can honestly say that I don’t feel as well when I eat meals like this.  Probably way too much dairy.  I feel better with lighter meals with lots of veggies.  But I have to have something more “fun” now and then.
